Healthy Vegan Dessert Bars

I, like most people, would love to have more sweets in the day if they weren’t so unhealthy for us.

Luckily for you and for me, we have these vegan and gluten free banana and chocolate chip oat bars to satisfy our sweet tooth that are a superior and healthier alternative to those that you will find in the supermarkets.

The secret? Whole-foods. These bars are made from staples in the vegan diet (such as bananas and oats) and are therefore super cheap to make, plentiful and quite satiating.

What are the health benefits?

The added bonus is their nutritional profile (as with my other vegan recipes). These bars are packed with high amounts of healthy fats Omega 3 and Omega 6, along with essential micronutrients such as Copper, Iron, Magnesium, Manganese, Phosphorous, Potassium, Selenium and Zinc. Plus without the use of any eggs, butter or oil, they are lower in saturated fat and cholesterol than other oat bars and desserts.

So, really, there isn’t any reason why you shouldn’t make them! Whether to have as a breakfast option in the morning for the family or a dessert to bring to the next gathering. These bars are sure to impress anyone and a game-changer for your weekly meal plan!

These vegan oat bars are delicious and bursting with flavour, whilst having an insatiable chewiness. Perfect for breakfast or as a healthy dessert snack!

Ingredients

  • 6 large 6 ripe bananas

  • 4 cups 4 rolled oats

  • 1 cup 1 almond butter*

  • 1.5 cups 1.5 vegan dark chocolate chips

  • 2 tbsp. 2 maple syrup**

  • 1 tbsp. 1 ground flaxseed (optional)

  • 1 tbsp. 1 chia seeds (optional)

Directions

  • Preheat the oven at 400°F (200°C) and have a baking tray lined with baking paper ready to the side.
  • Add the bananas into a large mixing bowl and mash with a fork to a smooth consistency. Then add the remaining ingredients into the bowl and mix thoroughly with a wooden spoon until all ingredients are blended together well.
  • Next, spread the mixture evenly onto the baking tray and sprinkle some more chocolate chips on top. Then bake for 20 minutes.
  • Take the baking tray out the oven and place the baked oat bars onto a large bread board.
  • Now you are all done! Just let the oat bars sit covered for about 12 hours so it has time to cool off and bind together.***

Notes

  • * You can substitute the almond butter with any other type of nut butter
  • ** If you don’t have any maple syrup, agave syrup will also work
  • *** My preference is to bake these at night so they are ready for breakfast the next morning!
  • TO STORE: Leftovers can be stored at room temperature in an air-tight container or ziploc bag for up to a week. You can wrap them individually with parchment paper to prevent them from sticking. These oat bars can also be frozen for up to 2 months.
