What a way to begin the day! Not only does this bowl look fantastic, but it is filled with essential vitamins, minerals and antioxidants to get the body off to a great start. As an added bonus, it only takes 5 minutes to get from the fridge to the bowl!

Vegan Smoothie Bowls

It seems to good to be true, right? Something that tastes so good and is really healthy for us? That’s the beauty of eating vegan 😉

As this bowl is packed with berries, it is a great source of antioxidants and phytoflavinoids, lowers the risk of heart disease and cancer and has anti-inflammatory effects on the body. You will also be filled with so much natural energy with all the fruit content that you can give that morning coffee a rest for one day!

Now you may have noticed from my other recipes that I love to sneak in ground flaxseeds and chia seeds wherever I can – and for good reason.

Just adding one teaspoon of flaxseeds and chia seeds will provide 87% of the RDI for Omega 3 fatty acids. Feel free to share this fact the next time someone asks how you get Omega 3 fatty acids on a vegan diet!

What a way to begin the day! Not only does this bowl look fantastic, but it is filled with essential vitamins, minerals and antioxidants to get the body off to a great start. As an added bonus, it only takes 5 minutes to make from the fridge to the bowl!

Ingredients

  • For the smoothie bowl
  • 2 2 frozen bananas

  • 7 Oz. 7 frozen mixed berries

  • 1 tsp. 1 desiccated coconut

  • 2/3 cup 2/3 oat milk*

  • 1 tsp. 1 flaxseeds (optional)

  • 1 tsp. 1 chia seeds (optional)

  • For the toppings
  • 1/2 1/2 banana, chopped

  • Handful your favourite berries

  • 3.5 Oz. 3.5 oats/muesli/granola**

Directions

  • Place all ingredients in a blender and mix for 1 minute. After it has mixed for one minute, we recommend giving a few taps to the bottom of the blender container and then mix for another minute (we don’t want any solid pieces floating around in our perfect smoothie bowl now do we).
  • Now simply pour into a bowl and spread your smoothie bowl toppings as beautifully as we have done in the picture 😉

Notes

  • * As a substitute, you can also use soy or almond milk. I would not recommend using rice or coconut milk as the consistency is not suitable for a smoothie bowl.
  • ** Other favourite toppings of mine are almonds, other berries, kiwi fruit, nut butter, hemp hearts and chia seeds.
  •  TO STORE: I would not recommend storing a smoothie bowl in the fridge as the texture becomes too watery over time. For best results, put the smoothie bowl in an airtight container and place in the freezer. Then simply let the smoothie bowl thaw out for approximately 10-15 minutes and stir together for a smooth consistency. If too watery, put into a blender and add some rolled oats/frozen banana. If too thick, add some oat milk. Do not store with the toppings as these will get soggy when frozen.
